A few weekends ago I was in upstate NY for a wedding, and it was a perfect weekend to celebrate long and old friendships with my besties from my school days.
We did quite a lot of what I do best in the Finger Lakes region of NY – relax. Well, as long as relaxing involves picking 30 pounds of blueberries. My freezer is very happy, as will we be when we are making our morning smoothies with delicious berries in the middle of January! I also picked apricots for the first time.
We drove by a small farm and the trees were laden with fruit.
The U-Pick farm is near Anthony Road winery in Penn Yan. There’s not much to picking apricots, just feel around for the plump ones and fill your bucket.
Maybe you are like myself and you associate the dried ones with, well, old people.
To my surprise, fresh apricots are delicious. As similar to dried apricots as a grape is to a raisin.
So what does one do with fresh apricots? That’s a good question.
Here’s an assortment of delicious looking recipes that call for fresh apricots!
(If you can hold on to them long enough to make something with them – yum!)
